Location: Barolo (Cuneo), the vineyards are set on the
side of the Boschetti hill overlooking the town of
Barolo and its castle.
Position: 350-400 m above sea level, with south-south
westerly exposure.
Soil: blue marl and yellow sand rich in lime and clay.
Grape variety: Nebbiolo, with vines over 10 years old. Manual harvesting with selection of the bunches.
Pruning: Guyot.
Density: 4,400 vines per hectare.
Vinification: stemming and crushing; maceration on skins for 8-9 days; temperature controlled
fermentation, ageing in fine grain French oak casks and barrels, followed by 12 month’s bottle ageing.
Colour: garnet.
Bouquet: persistent and penetrating with scents of liquorice and rose.
Flavour: elegant, harmonious, dry, austere.
Serving: serve at a temperature of 20°C, opening the bottle a few hours before pouring into balloon glasses.
Accompaniments: game, roast and braised meats, mature hard cheeses.
