The character of an indigenous grape, Arneis, is revealed in the delicate perlage of this fresh and captivating sparkling wine, which accompanies special occasion menus with class. The perfect aperitif, it exalts all fish dishes and vegetable hors-d'oeuvres.

Vinification: Pressing - cold static decantation
after enzyme addition, must filtration.
Fermentation: in autoclaves after the addition of
selected yeasts at a controlled temperature of
14°C at a pressure of 2 atm. Until a residual sugar
level of 30 grams per liter is reached. The
fermentation process is stopped by refrigeration
at 12.78% alc. and 5.5 atm. pressure.
Hefinement: 2 months on lees
Colour: Pale straw with fine and persistent perlage
Bouquet: Very intense notes of pear, peach and
hawthorn flowers
Flauour: Dry, with a perfect balance of alcohol,
acidity and residual sugar
Serrice: serve at a temperature of 6° C. - will keep
tor 3-5 years in a cellar.
